  When all else fails, we love making this dish. It's cheap, simple and delicious - three of our favorite descriptors of a Monday night dinner at home. Here's how to make this healthful, light dish in literally ten minutes.

  The sauce is called piccata. It's a classic staple on Italian-American menus especially in our home state of New Jersey. You can make this simple piccata sauce with chicken or even veal, if you fancy.

  Pair this dish with simply steamed rice or a fresh crusty baguette you picked up on your way home from the office. Done.

(serves two)

Ingredients: 

-1 lb. lemon sole

-1/2 cup dry white wine

-2 tbsp pickled capers

-1/4 cup fresh lemon juice

-1 tbsp butter

-1 handful fresh parsley, chopped

-salt and pepper to taste

Method:

1. Season fish lightly with salt. Dredge fish in flour, salt and pepper.

2. Over medium high hear, sear fish until golden brown on each side (about 4 minutes per side. Remove from pan, set aside. 

3. Deglaze pan with white wine and allow to boil before adding capers + lemon juice. Add butter and half your parsley. Stir and spoon sauce over fish. Garnish with remaining parsley. Serve immediately.
