Make This Late Summer Salad
This quick, easy combination of seasonal summer produce breaks away from the salad norm and focuses on fruit. The fresh mint cuts through the juicy flesh of the melon, adding extra refreshment. Accompany with tomatoes and arugula and your favorite balsamic dressing if you so desire.
(serves two)
Ingredients:
2 cups watermelon, cubed
1 handful fresh mint, picked from stems
1 handful cherry tomatoes, or 1 heirloom tomato, cubed
1 handful arugula
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
generous pinch of sea salt
Method:
Using your hands, toss watermelon, mint, tomatoes and arugula in a bowl with balsamic and olive oil.
Garnish with sea salt, any extra mint you may have and serve.
