Slow-Fast Short Ribs For Any Wednesday

Weeknight dinner prep worries, be gone!

This quick and easy recipe involved a flash marinating session and a quick sear on the stovetop or grill. We loooove short ribs (bone-in cross cut, for fast cooking!) because they are cheap, easy and super duper fatty and flavorful. They are almost idiot proof.

Ingredients:

  • 4 cloves garlic, sliced

  • 1/4 cup rice wine vinegar

  • 1/2 cup soy sauce

  • 1 tbsp. toasted sesame oil

  • 2 tbsp. light brown sugar

  • 2 tbsp. sesame seeds

  • 1 tbsp fresh cracked pepper

  • 2 lbs. cross cut, bone-in short ribs, sliced into 4 inch long pieces.

Method:

  1. Combine garlic, vinegar, soy sauce, sesame oil, brown sugar, sesame seeds and cracked pepper in a large mixing bowl and whisk together.

  2. Add your short ribs to the bowl, coating to toss, and marinate for at least 10 minutes. Grill or sear in a large cast iron over high heat for approximately 2-3 minutes on each side. Rest for 10 minutes before serving, over rice or mashed potatoes or pasta or whatever helps you sleep at night.
