Maitake Mushroom Pasta

This recipe comes together in under 30 minutes, which is why we love it for a simple, minute dinner at home.

We scored some beautiful maitake mushrooms (also known as hen-of-the-woods!) from our local farmers’ market, but as Ina the Warrior Princess would say, “store bought is fine” but at the same we DO encourage you to support your local farmer now more than ever, if you can.

Anyway here is the recipe.

Ingredients:

-2 tbsp extra virgin olive oil

-1 lb fresh or store bought pasta - fresh is always better :)

-1/2 stick unsalted butter

-1/4 cup heavy cream

-1 lb maitake, oyster and/or cremini mushrooms - whatever your budget allows you to do, picked into large bite size pieces.

-1/2 cup grated parmesan cheese

-1 handful freshly chopped chives

Method:

  1. Boil your pasta water with LOTS of kosher salt. Cook pasta until al dente, reserve 1/2 cup pasta water, drain and set aside.

  2. Add olive oil to a sautee pan - over medium high heat, sear mushrooms on one side for about 3 minutes or until golden brown.

  3. Flip your mushrooms and add butter, cream, pasta water and parm and stir constantly. Add pasta to the pan until well incorporated with the sauce. Season to taste with freshly ground black pepper and salt. Add fresh chives and stir right before serving.
