Putting The 'Cue In Quarantine
This pulled chicken life hack doesn’t require a smoker or a grill, but still delivers those classic barbecue flavors. Perfect for those of us who don’t have access to a barbecue grill this season.
Ingredients:
-2 lbs. chicken breast, patted dry and seasoned with salt and pepper
-1-2 cups chicken stock
-1 bottle of your favorite barbecue sauce
-Buns! I like Martin’s potato rolls with sesame seeds
-American cheese, or your favorite melty cheese
-1 small white onion, diced McDonald’s style (reference photo)
-Pickles for garnish (optional)
Method:
Preheat oven to 375 degrees F. Bake chicken for about 30 minutes or until fully cooked through. Set aside to cool.
Using a fork (or your hands), shred chicken into bite-sized pieces. DO NOT cut into cubes—blech.
In a heavy bottom sauce pot, add your chicken, about half your barbecue sauce and one cup chicken stock. Bring to a boil and then reduce heat to simmer until flavors are incorporated. Season to taste.
For optimal BBQ vibes, smear a thin layer of mayonnaise on your buns and toast the inside-down on a warm pan.
Assemble sandwiches and serve.
