This fridge hack is brought to you by the wonderful powers of citrus!

We always keep a solid stock of lemons in our produce drawer. They’re the finishing touch that’s needed when making simple seafood dishes, cocktails or if you just need a refreshing hydration moment with a lemony seltzer or water.

But what they’re really great for is chicken. On the grill. To achieve that crispy skin and avoid a bird that’s dry and sad, we bring a big bowl of cut up lemons grillside.

The trick? Assume you’ll need one full lemon per chicken thigh. Set the grill to medium high heat (about 350 degrees F) and start skin side up. Every few minutes squeeze lemons over chicken, then close the grill lid and flip once the temperature inside exceeds 350 degrees again.

When they’re done, squeeze with a final shower of lemon juice and a flurry of sea salt. Serve.
